Bread Pudding with Vanilla Sauce
You can use any variety of Lewis Bake Shop ½ Loaf Breads to change up this well-known comfort food! This recipe works best when the bread is dried out (not toasted). If your bread is still fresh, you can cut it into 1” pieces and bake on a baking sheet in the oven for about 6-8 minutes.
Ingredients:
- 8 slices of Lewis Bake Shop Hawaiian Bread, cut in 1” pieces (approx. 5 cups)
- 2 tbsp butter, melted
- ¼ cup raisins, pecans or coconut (optional)
- 3 eggs, beaten
- 2 cups milk
- ½ cup sugar
- ¼ cup brown sugar
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- 1 tsp vanilla extract
Directions:
- Spread bread pieces and optional raisins, pecans or coconut into 8 inch square baking dish and drizzle melted butter over the bread.
- Mix together eggs, milk, sugars, cinnamon, nutmeg and vanilla until combined.
- Pour mixture over bread cubes and let set for about 10-15 minutes while the bread absorbs the mixture. In the meantime, preheat oven to 350°F.
- Bake for 30 minutes. Then loosely cover with aluminum foil to prevent burning of the tops of the bread pieces, and bake an additional 10-15 minutes until the top is set.
Vanilla Sauce Ingredients:
- ½ cup brown sugar
- 1 tbsp flour
- Pinch of ground cinnamon
- 1 egg
- 2 tbsp butter, melted
- 1 ¼ cups milk or heavy cream
- Pinch of salt
- 1 tbsp vanilla
Directions:
- In a heavy saucepan over medium heat, whisk together sugar, flour, cinnamon, egg, butter, milk/cream and salt, stirring constantly for 10-12 minutes until thickened.
- Stir in vanilla and pour over bread pudding before serving.
